Flat Bread Love

Hello!

I had a slow morning. I didn’t even oversleep, but just seemed to be moving S-L-O-W. Even though I was running super late, I wanted to EAT!

I made an identical breakfast and lunch wrap (hey, it was a time saver to just use the same ingredients) of a piece of whole wheat flat bread, pesto, ham, spinach and a little mozzarella cheese!

I have to say I never saw myself willingly loading up on the spinach, but it looked so fresh and kind of snapped when you bit  into it – yum…

I couldn’t decide what I wanted for dinner until I check my veggie drawer. My mushrooms needed to be cooked ASAP!I used another wrap and while I sautéed some mushrooms, I spread a really thin layer of pesto, some mozzarella, thinly sliced tomatoes and spinach onto the flat bread.

Then I set the oven to 350 degrees, added the mushrooms and sprinkled a tad more cheese! Into the oven it went!

Have you ever spent time making something and then weren’t that hungry when the final product was finished? I may or may not have snacked on mushrooms while the pizza was cooking 😉

I had 2 squares and am saving the rest for lunch tomorrow.

I love that the flat bread was crisp and not soggy. It is super thin, so I thought it might turn into a mess, but it was AWESOME!

SOOOO, now I am preparing for my first “Healthy Living Club” meeting I am starting with my senior girls. Tomorrow we’ll be discussing body image. I am going into this group with an optimistic attitude and hope the girls will as well. I am no expert on living a healthy life but I get up and try every day, so that’s a start. I am just hoping to facilitate a discussion about what a healthy body and healthy life looks like. Some of these girls have so many skewed views of how they “should” look….I don’t want them to go out into the world in June and think they are not…enough. As much as it is going to be about doing activities and discussing current issues around body image and the effects the media has on them, it will hopefully also be a place where they can build a real sense of self and self-esteem.
