Long time no see :)

Hello!

Busy does not even begin to describe the last few days! Work, school, paper writing – oy! I wrote a paper Sunday and that afternoon spent some time cooking!

I made Spinach and Orzo Soup with Turkey Meatballs!

and to think it all started with some chopped garlic!

To make the turkey meatballs I did the following after looking up some different recipes and mixing them up!

1 12oz package of lean ground turkey

1/4 cup whole wheat bread crumbs

1/4 cup Parmesan cheese

A lil’ salt and pepper

1 egg

1 tablespoon of pesto (no parsley…i figured it might work well…and it did!)

GARLIC!

Then I did the fun part and got messy!

ignore the sugar in the back….definitely not included in this recipe!!

Aren’t they purrrrdy? 🙂

I think my nonna would be proud!!

Next, I sautéed a shalot, some garlic and some celery. Then I added a mix of chicken and vegetable broth.

I also added orzo! Then the meatballs to cook!

They popped to the top when they were about done! ps. I added a spoonful of tomato paste for flavor and color!

Lastly, I added spinach!

It’s delish!

Wraps are kind of my life.

hehe.

Good morning all!

Yesterday was super intense at work and when I got home I just wanted to relax a bit. We are having an Accreditation team coming on Monday and we were running around all day trying to get everything ready! I don’t like being under pressure but I seem to get the most done when I have a short amount of time. Anyhoo, last night when I got home(with some fro yo in hand) my roommate and I watched Jamie Oliver’s Food Revolution…He is so passionate and genuine about wanting unprocessed foods in schools. I love passionate people who go after what they want! As soon as it was over we began watching Brothers with Jake Gyllenhaal and Tobey Maguire. It was sooooo real and sad and unexpected. My only advice would be to not watch it while your trying to relax! It was kind of gut wrenching. What did we do after watching such an intense movie? Of course, follow it up with Joe Dirt. haha.

Anyhoo, this morning I wanted to try use up the last of things I had like spinach and the flat bread (I don’t want it to mildew). I also had some shredded pepper jack and eggs…what do all of these ingredients make?

in a word?

DELICIOUS!

I think even just a little pepper jack adds a ton of flavor and the way the spinach snaps when you bite into it adds another layer of texture…

In other news I am contemplating whether or not to do the Half-marathon on May 1st. I raised 500 bucks for the American Heart Association and am so proud of that and so appreciative to the generous people in my life. Something got in my way of training for about 2 1/2 months…a little thing called MONO…or rather the Epstein-Barr virus (same difference?). Even since I’ve been feeling better, I get flippin’ exhausted after a workout that I haven’t found the strength to be consistent…I really want to prove I can do it, but I really don’t like the thought of half-assing 13.1 miles. So what I have been thinking of doing is signing up for another 1/2 marathon and actually training without being sick so that I can run successfully and not crawl toward the finish line. Sometimes things are out of our control and maybe I should accept it. The money is still going toward a good cause and I ‘ll still be doing a half marathon, only later without a viral infection to screw me up for months. Any thoughts?

I am a little torn up about it.

ok, off to my coffee heaven, aka PEETS!!! Tons of studying to do and lesson plans…I might be the only woman NOT to love Jane Austen. I am teaching Pride and Prejudice need to brush up…oy!

Flat Bread Love

Hello!

I had a slow morning. I didn’t even oversleep, but just seemed to be moving S-L-O-W. Even though I was running super late, I wanted to EAT!

I made an identical breakfast and lunch wrap (hey, it was a time saver to just use the same ingredients) of a piece of whole wheat flat bread, pesto, ham, spinach and a little mozzarella cheese!

I have to say I never saw myself willingly loading up on the spinach, but it looked so fresh and kind of snapped when you bit  into it – yum…

I couldn’t decide what I wanted for dinner until I check my veggie drawer. My mushrooms needed to be cooked ASAP!I used another wrap and while I sautéed some mushrooms, I spread a really thin layer of pesto, some mozzarella, thinly sliced tomatoes and spinach onto the flat bread.

Then I set the oven to 350 degrees, added the mushrooms and sprinkled a tad more cheese! Into the oven it went!

Have you ever spent time making something and then weren’t that hungry when the final product was finished? I may or may not have snacked on mushrooms while the pizza was cooking 😉

I had 2 squares and am saving the rest for lunch tomorrow.

I love that the flat bread was crisp and not soggy. It is super thin, so I thought it might turn into a mess, but it was AWESOME!

SOOOO, now I am preparing for my first “Healthy Living Club” meeting I am starting with my senior girls. Tomorrow we’ll be discussing body image. I am going into this group with an optimistic attitude and hope the girls will as well. I am no expert on living a healthy life but I get up and try every day, so that’s a start. I am just hoping to facilitate a discussion about what a healthy body and healthy life looks like. Some of these girls have so many skewed views of how they “should” look….I don’t want them to go out into the world in June and think they are not…enough. As much as it is going to be about doing activities and discussing current issues around body image and the effects the media has on them, it will hopefully also be a place where they can build a real sense of self and self-esteem.
